Zucchini Bread
This is Dan's Grandma, Joy Poulsen's, recipe for Zucchini Bread. It's the only one I ever use!
Ingredients:
3 eggs
1 cup oil
1 TBSP vanilla
1 cup sugar
3 cups flour
3 tsp cinnamon
1 tsp baking powder
1 tsp baking soda
1 tsp salt
2 cups grated zucchini (peeled and seeded)
1/2 cup nuts or chocolate chips (if desired)

2 cups grated zucchini (peeled and seeded)

Directions:
Beat eggs, oil, and vanilla together until well-beaten. Add sifted dry ingredients. Stir in zucchini. Add nuts/chocolate chips. Pour into 2 greased bread pans. Bake at 350 degrees for 45-50 minutes.
Makes 2 loaves
